If it hasn't been taken care of properly the meat is terrible. I kept hearing stories of how bad it was (one brother was given some, tried cooking it, stunk up the house now wife won't let it in the house!). When I checked other people said it was great. Was glad to find mine was that good.

You are right on! the first 2 hours after the shot is the most important of all. More meat gets messed up because of the mistreatment in the field than for any other reason.

I have no real experience with bear, but I can say with 100 % certainty if you done care for Antelope quickly you will have objectionable meat. Getting the skin off and the meat cool is paramount to good eats! Not to mention it is much easier to skin them when they are still warm. Granted a 120 pound Antelope or 165 pound deer is easier to deal with, but I am sure you can skin and quarter a bear on the ground.

My oldest brother and his buddies would hunt bear in Quebec with this outfitter and I would hear horror stories of how bad the meat was. This wasn't what I heard from other outfitters, and people on the web. It turned out that the guy would leave the bears until the next day and I'm sure even then he didn't get up and do it at the crack of dawn. That was the meat my other brother was given. Boy, was his wife mad at him when he stunk up the house cooking that stuff. That was part of the reason I did mine outside on the grill.

My bear was a very small 2-3 year old. Thought it was bigger but first bear hunt, dusk, distance, was by itself, thick fur ---. Any excuse will do. Rolling Eyes

They hung ours in a tree. What I have heard is, you should have a couple of guys to help, a couple of sharp knives on hand and be prepared to get greasy.

Wabbit! made 2 last night in my rotisseri. Stuffed with onions and garlic, and lemon pepper rubbed on the outside. Very Happy

W/deep fried potatoe wedges.
