My oldest brother and his buddies would hunt bear in Quebec with this outfitter and I would hear horror stories of how bad the meat was. This wasn't what I heard from other outfitters, and people on the web. It turned out that the guy would leave the bears until the next day and I'm sure even then he didn't get up and do it at the crack of dawn. That was the meat my other brother was given. Boy, was his wife mad at him when he stunk up the house cooking that stuff. That was part of the reason I did mine outside on the grill.
My bear was a very small 2-3 year old. Thought it was bigger but first bear hunt, dusk, distance, was by itself, thick fur ---. Any excuse will do.
They hung ours in a tree. What I have heard is, you should have a couple of guys to help, a couple of sharp knives on hand and be prepared to get greasy.
