I went out and caught 3 more gar and make gar jerky out of them. This is how I went about it...
The top gar is 44", the middle is 42" and the bottom is 40"...
I put these guys on ice until the next morning, after removing the head and tails...
Start with a gar and a pair of good sharp tin snips...
Cut it up the middle of the back...
Fillet the hide away from the meat...

This is all meat and no bones...
This is the grinder I used to grind up the gar...
Ground gar on the left, home made spices on the right...
Gar jerky on spices...
Jerky on smoking rack...
Gar jerky in smoker...
3 pounds of smoked gar...
I made the rest of the ground gar meat into patties after adding an egg, onion, cornmeal and my spices...
Well, what do you guys think?

do you have a sausage nozzle for the mincer????
looks similar to what we use.

Elvis,
yes, I have the sausage stuffer for this mixer, as well as the bread hook, pasta maker and a handful of other useful attachments...
My mother in-law got me this mixer several years ago and I really don't know how I got along without it....

How about send us your spice mix recipe? I'd love to try it out. I smoke quite a bit of meat every year and spice mixes really make the diff. I've never jerked fish that way, I usually dry it instead of smoking it.

Suzanne,
I still prefer gar being deep fried like catfish and this will most likely be my last "fish smoking" - unless I can get hold of some fresh salmon...
I normally don't share my "rub" but, if you'll send me a PM and remind me, when I get back to the house this evening and on my computer, I'll send it to you. This is the rub mix that I always use on deer, elk, caribou, pig, chicken, etc. and I think it's pretty doggone good. In fact, everything that goes in the smoker, gets this rub on it....
