Is the 20ga. and the 12ga. barrels interchangeable on the same stock. I've looked on the internet and can't find any info on it.

Why would you do that? I wouldn't recommend. You'll end up with a cal. 20 that carries too much weight for its class.
You happen to know the CZ/Brno ZH-series? They come as a mixed or a cal 12 or a cal 16, don't know for cal 20. But here the breech is moving. Each time you open the gun the breech comes back and when you close it, the breech moves back to the front. A kind of eliminating head space. I often take such a gun on doves using cal 16-barrels. Then I can shoot rather large distances and the heavy weight of the gun only gives little recoil. (and the funny thing with these guns: it has a double trigger but when you pull the second trigger twice, you will shoot 2 times).
so my advice: when it's for normal hunting: when you want a cal 16 or a cal 20, take a gun that's made in that caliber so that you will have that handsome, fast pointing featherweight instead of this heavy cal 12

not a quick answer to that one as some will and some wont. eg our single bakails wont all interchange between the 4 of them but 1 or 2 can.
check the models themselves as some will be built on same frame, it should say in specs.

The best reasons to choose a "switch barrel" are expense of only one firearm and familiarity of fit between gauges.
The only downside is the extra weight (between a normal 12-gauge and most 20-gauges). This, however, can be a blessing in disguise. Comparing identical shot-weights and comparable velocities the 20-gauge will have more apparent recoil in a typically lighter firearm than from a heavier stocked 12-gauge. This of course can vary from gun to gun, but if somewhat recoil sensitive, the heavier frame and stock of the normal 12-gauge can make the 20-gauge more comfortable.

I have shot a 20ga. all my life, and don't care for the recoil of a 12 ga. Also I don't want to go through the expense of a compleat gun. I had a 12 ga. smith & weson and all it did was hurt, so I gave it to my youngest son.

My 12 guage is retired for years as I don't shoot ducks or geese anymore. I had a 16 guage that I loved but getting ammo here was a pain. I now use a Baikal with a .22 magnum and 20 guage in an O/U configuration. Yes it is a single shot but the game I miss with the 20 often lets me get another chance with the rifle.
