When you live in the country and see game animals all the time, you don't seem to get so excited about seeing a trophy. That said, when I hunt (I'm in a 4 deer county), I tend to watch a lot of fairly good bucks walk by without firing a shot. I think the most I've seen at one setting was bout 25 or 26 bucks. I have the tendency to make sure I have one tag until the last day, just for that monster, but will occasionally take a small doe for camp meat. Although tagging out is easy in this county, I almost always end my season with most of my tags left over.
Now hogs are a different story, I'm always after them. I really like to BBQ wild hog.

We are freezer hunters in this family. We hunt for the meat and thats it. Well besides the fun and relaxation. I dont have to shoot a thing to enjoy the freedom of what im doing.

Hunter success is under 50% in my state for *any* buck. Big ones are rare unless you goto a serious amount of effort. I usually have no problem finding deer, and every few years a big one... but I just enjoy hunting, even the small ones are fun to watch.

After I get 3 deer in the freezer I "may" let a smaller buck pass. I hunt for meat a nice rack is a Bonus. I like to have between 3-5 in the freezer a year.

Folks keep telling me "You can't eat the horns!" and I agree. I enjoy the experience and the meat. Now if a huge old buck wants to wander into range I 'spect he'll get shot at!

There is the third choice..
THE HUNT..
I never keep trophy, my wife has great understanding when it come to my choice of sport. But she absolutely refuse for me to keep dead animals body parts (except leather) at home except in the fridge for a short period of time.
Meat we could get from the butcher, cleaned and cut to perfection.
What I like is the opportunity to get out there, walk around and make some noise with my lightning stick.
The chance for me to get some fresh meat while I do that sweetened the deal a lot
The fact that there are no busy body, who would tell you off for the fact that you own a gun or guns, around made the whole experience even better...

Like Gelan, I am not allowed to "display" animal body parts in the house, hence I have my only set of antlers and skins I have tanned in my garage.
Luckily Tricia doesn't complain about the meat in the freezer, which is my reason for hunting, other than the cameraderie with mates and the thrill and excitement of the hunt...getting back to our roots as "man, hunter gatherer".
I am not really interested in trophies, although as others said...if a big buck happens my way.....

As far as my trips to the US to hunt elk go, it's neither TBH.
It's the hunt itself, the companionship of good friends & a time to get away from the stresses & strains of the "real world".
If I could bring the meat back, it'd be different.
I see hunting here in the UK differently: Meat & trophies are both a part of it but the stalk itself is what it's all about.
