Now that's a game animal that we don't have in my part of the country. How are they for eatin', I've never had the pleasure. I've alwanted to try a goose, and a phesant, which we don't have either.

I just put a bunch of goose breasts in the brine today, and will smoke them tomorrow.

I use Pickling Salt and Brown Sugar for the brine.
When I put them in the smoker, I will spread honey over them.
I'll pull them when they are still a little pink.
If you wait until they are totally done they will be tough.

When cooled, I will slice thin with my electric meat cutter.
Dip them in BBQ Sauce, or make a sandwich, they can't be beat.

To BBQ them, I make a marinade using Worcestershire sauce, teriyaki sauce, BBQ sauce, and crushed garlic.
I cut the breasts in strips and marinade overnight, then BBQ them.
This was a recipe in progress over the past couple of years, until Ben's Buddy finished it this year by adding the garlic.
The garlic, added to the rest of the stuff really made the goose taste great.

We finished up our early season today. We only got 4 this morning, our worst day this season. Still was a fun hunt, lots of BS'n, some funny moments, and good friends, even caught a little snooze before we left. Second funnest hunt of the season. We ended up taking 131 geese this early season, almost doubling our last early season total, and topped our entire season total form last year. Now I will catch some sleep before I hope to leave for Canada in a coupe weeks if my car doesnt cost to much to fix. Confused

Ben is in Alberta and just called tonight.
He said that hunting there isn't like TV.
The Snow Geese are in one field one day, and in another field the next.
They only shot a few on their first day hunting.

Seems like I have been telling him this for the past 14 years of his life.
Sometimes a guy just has to reinvent the wheel on his own.

I had #2 Son Zach duck hunting yesterday on Opening Day and we had a great time together.
Time to break in another boy on hunting. Very Happy Very Happy

I'm heading home to Ely to visit my Mom and do some Duck Hunting with my brother for a few days.
Also I'll fix up the deer stands as long as I'm there.[So much hunting--So little time Sad ]

Here is some pictures of last years hunt. It was 18 deg with a 35 MPH wind. We were 60 miles east of Amarillo Tx.
My hunting buddy the first day.

One of the guides on the second day. As cold but no wind that day.

If you have a dehydrator give goose jerky a try. I used the same seasoning as beef and deer and it turned out great.

Sweet pics. I want to get down to Texas one day. The only problem is you pretty well need a guide, that hole area up in the panhandle is leased up.
