You must be talking about barbacoa..... no hooves in that. I found a hog tooth in a tomallie once. I personally like lingua. Barbacoa is a little greasy in a tacos, but lingua, mmmmmm, it doesn't get any better than that.

As far as the hoof goes; we send that up north, ground up in baloney and Vienna sausages and potted meat. We don't eat that stuff down here. Very Happy

I'm getting there, I've got 3 already in the freezer. I just can't wait till the leaves start to fall, I have a lot of walnut, hickory, and oak trees on my property and they love to just sit up in those trees grinding away at the mast.
Last year I got 9 squirrels out of one walnut tree in about 30 minutes.
