I talked to the webhost guys about the reason the website runs so slow sunday mornings and they informed me that sunday mornings is when our webserver goes through its routine backup. As you can imagine there is a ton of data to backup so while its processing things in the morning, the website will appear sluggish and difficult to navigate.

Sorry for the slowdown but its temporary and only a few hours each week.
